Avocado oil is an excellent source of “good” fats, which have beneficial effects on inflammation. As a rich source of monounsaturated fatty acids, avocado is a very unusual fruit. The most abundant fatty acid is oleic acid, which is also the main ingredient in olive oil. Oleic acid has been linked to reduced inflammation and may have beneficial effects on cancer. Their carotenoids are well absorbed and easily assimilated by humans, due to their high fat content. Because avocados are high in fat, the carotenoid antioxidants in them are particularly well absorbed. Avocados are rich in plant compounds and a “sugar” called D-mannoeptulose.
